This knife is characterized by extremely long cutting life and long-term sharpness. Damascus steel also gives each knife an individual look. Like the regular knives in the SHUN Classic series, the special jade-green-black-grained handle of the limited edition kai is made of Pakka wood, which is treated with selected resins to be particularly flexible and resistant to moisture. The integrated caliper ensures stability and balance between the blade and the handle. The traditional shape of the Japanese knife fits comfortably in the hand and provides a secure grip when slicing.
